Chef’s Table is one of the best restaurants in the Philippines. So when Bruce Lim, the mastermind behind Chef’s Table, speaks about restaurants, it’s best to sit up and listen.

This week, the affable chef returns to share with us his thoughts on new concept restaurants and the importance of having quality appliances in your kitchen.

Chef’s Table applies an open kitchen concept. What gave you the idea for such a restaurant?

I get irritated with chefs who keep secrets, so I show off everything. I can also educate all my guests about Filipino food. At the same time, I give my guests the feeling that they’re eating in my kitchen. I think I’m the only one crazy enough to do it.

Do you see any future trends in terms of restaurant concepts? (For example, Waku Ghin Singapore has private rooms where the chef cooks for diners at their table.)

Yes definitely. Concept restaurants are the way most chefs are taking their food. Not because it’s a gimmick or anything but this way you can see how playful the chefs can be. And it gives the guests cool stuff to talk about.

What is a typical workday like in a professional kitchen? Could you give us a rundown?

Wow… this is tough because a restaurant is a living, breathing animal. Everyday is different and if you don’t care for it, it can turn around and bite you in the butt. In saying that, everyday I try to keep the insanity under control in the restaurant. At the same time, I work on different dishes so that my guests don’t get bored with my food.

What’s one appliance you can’t do without at work and at home?

A really good gas range. If you can’t cook comfortably, you end up in a really bad mood. At least I do.

How important are quality appliances to the cooking experience?

It’s like asking a painter to paint on a bed sheet instead of a canvas. So I have to have quality equipment in my home and in my workplace.  You can achieve more and the quality of your work will show.

How big a part does technology play in the kitchen?

Technology plays a big part in today’s standards. The way you handle food, the way you prepare it; there are now regulations. Don’t get me wrong, the regulations are important. They keep people safe and healthy. So when your equipment has that technology that helps maintain certain temperatures, or it sanitizes the air within the fridge, then you’re using technology to give you peace of mind.

We understand that you have a couple of Electrolux appliances at home. Any particular reason for choosing Electrolux?

Yes, I use the Electrolux gas range. I actually have two side by side. I love it because it can accommodate my big stockpots and I love the amount of BTUs – (British Thermal Units – measurement of thermal energy) it pushes out so the flame is nice and high. Also, it has a full-size oven since my wife and I love our roast beef. I also have a refrigerator that has adjustable shelves and I’ve a separate cold area for my ice cream in my freezer area. I just love it!

Do you have any tips for choosing home appliances?

Do your homework and look at what you need to make your kitchen comfortable for you. Since you will be using your kitchen to cook for your loved ones, you must have fun and make it as painless as possible.

If you could design your own appliance, which would it be? What features would it have?

It’s hard to say because Electrolux thinks of everything. Pick up a brochure and I’m sure you’ll see everything that you need.

Do you have any tips for aspiring chefs?

Enjoy food and eating, don’t think of it as a chore but more as a way to express yourself. Have as much fun as you can and never stop pushing the boundaries. When you reach the end of the road, you’ll realise that there’s  so much more to learn. So never stop learning!
