With Easter just days away, supermarkets and shops everywhere are once again stocking up on a wide assortment of colourful Easter eggs – of the chocolate variety that is. But you don’t have to contend with only chocolate eggs all Easter. Rediscover the egg, even as you busy yourself with decorating and colouring eggs shells or hard boiled eggs as part of your usual Easter festivities.

The humble egg seems to hold special significance to different people across various cultures besides Easter. Perhaps it’s because the egg is often an emblem that symbolizes life and fertility. You see coloured hard boiled eggs being offered at religious ceremonies, as gifts at baby showers, and ceremonial food served at birthdays and weddings.

Yet if you leave the cultural significance of the egg aside, did you know that the egg is one of the most common foods enjoyed by people around the globe? You’ll be hard pressed to name any culture that does not use eggs in their diet. The egg is one of the most versatile foods around. An entire meal can be made using the egg alone. It’s also a useful and important ingredient for baking and in sauces. Its natural food chemistry makes it a crucial ingredient to help in coagulation, emulsification and browning.

The health benefits of the egg are also as fascinating. Did you know that it’s a good brain food and a source of high-quality protein?

And, one of the best things about eggs is that it can be cooked in a variety of ways. You can boil, steam, bake, fry or poach. Deviled Eggs Recipe

This is an easy fuss-free snack for any occasion. Have it at your family’s Easter picnic, as an attractive appetizer for your next get together with family and friends, or simply as a snack on a lazy afternoon. It takes just minutes to prepare this on your Electrolux induction hob, but taste these deviled eggs, and you’ll be tempted to be back for more.


1 dozen eggs  1/3 cup mayonnaise

2 teaspoons dijon mustard 1 tbsp minced onion or shallots

¼ teaspoon Tabasco Salt, Pepper and Paprika
Makes two dozen deviled eggs.

* For a more kid-friendly deviled egg dish, skip the Tabasco sauce and replace the dijon mustard with honey mustard.


  1. Hard boil the eggs. Place eggs in a saucepan and cover with at least 2cm of water.
  2. Add a teaspoon of vinegar to the water. This helps prevent the egg whites from leaking out of any cracked egg shell.
  3. Add a pinch of salt to the water. Bring water to a boil.
  4. Cover the pan, and remove from the heat once water is boiling.
  5. Let the eggs sit in the saucepan for 12-15 minutes.
  6. Drain hot water from the pan and run cold water over the eggs. You can crack the eggs at this point to make it easier to peel off the shell.
  7. Let the eggs sit in the cool water for about 3 minutes, changing water if necessary to keep it cool.
  8. Peel the eggs and use a sharp knife to slice eggs into half (lengthwise).
  9. Gently remove the egg yolks and place them in a small mixing bowl.
  10. Arrange the eggs whites neatly on a serving platter.
  11. Using a fork, mash up the egg yolks and add mustard, mayonnaise, onion, Tabasco and a sprinkling of salt and pepper.
  12. Spoon the egg yolk mixture back into the egg white halves. Sprinkle on some paprika to enhance the colour and taste.

If you want the filling to look prettier, place the egg filling into a freezer bag. Cut off one corner of the bag, and pipe them into the egg white halves.
