Four tips that encourage “green” eating

In a world where potato chips, fried chicken and candy exist, it can be hard to get children to eat their greens. Given that a healthy, balanced diet means that one third of our meals should consist of fruits and vegetables, the mission to feed them right can be quite a challenge.  Here are some handy ideas to get your kids more excited about their greens.

Make them accessible

It’s no secret that children enjoy being able to make their own choices since adults usually call the shots. So let your kids play a part in choosing the vegetables they might like, and then make it the most accessible snacks for them.

Take them to the fruit and vegetable sections of the market, let them admire the colours, smell the produce and pick out what they like. Do make sure to lead by example and eat what they pick out, too.

Even adults like to put some dressing on their salads, so why not jazz up vegetables for your kids by pairing crunchy vegetables like baby carrots or peppers with a tasty dip? For better results, serve them an appetiser of colourful and tasty vegetables paired with healthy low-fat dips like hummus tzatziki, or homemade ranch dressing made with fat-free mayonnaise.

Fresh vegetables also tend to taste better than processed or canned versions, so try to avoid serving the greens out of a can.

Hide the veggies

Sometimes, subterfuge may be the answer. Sneak the vegetables in with your child’s favourite foods, such as mashing boiled carrots into their potatoes for special orange-coloured mash potatoes. Or cover their broccoli with mushrooms and cheese.

Purees can be used as a substitute for other ingredients in cooking or mixed into dishes. Vegetable soup with pureed potatoes or tofu instead of cream can be a healthy starter for dinner. Spinach and mushrooms can be mixed into delicious tofu burgers.

Fruit and vegetable smoothies can also do the trick. Carrots and apple juice are a sweet, popular combination, or try broccoli and blueberry for a more unconventional pairing. Have fun in the kitchen
