Microwave ovens are one of the most versatile cooking appliances one can have in the kitchen. Which other cooking device can claim to defrost and cook foods as diverse as blanched spinach and potato chips?

Owners of combination microwaves like the Electrolux EMS3067X will also find that they have access to grilling and convection cooking functions, enabling them to cook a dish that requires varying temperatures and methods such as chicken tikka.

Chicken Tikka is one dish that can be defrosted, baked then grilled in microwave ovens with multi-stage cooking functions like the EMS3067X.

The key to this is the microwave’s ability to perform multi-stage cooking, which enables you to cook at different power settings at different stages of the cooking cycle. So instead of having to monitor, stop and change the power levels at each interval, you can use the multi-stage feature to programme the microwave to do it all in one cycle.

The above-mentioned chicken tikka, for example, can be defrosted, baked and grilled using the EMS3067X’s multi-stage cooking feature, which can be programmed to run three different cooking stages in one cycle. Or a hearty soup like minestrone can be cooked with the microwave set to full power first, then to a lower power setting for simmering.

First off, consult the manual to learn how to properly programme your microwave for multi-stage cooking.  It can be surprisingly simple, as with the EMS3067X, where each stage is programmed with a simple press of the cooking function, selecting the power level, then turning the control knob to set the time before repeating the process for the next stage.

Some tips for cooking a dish in the microwave using the multi-stage feature:

  • If unsure of defrosting times, check if your microwave has a delayed start feature for each stage. It’s always best to underestimate defrosting times if unsure, the food will continue to defrost during the interval between the defrosting and the start of the next stage.
  • For large, dense foods that are being cooked, a longer standing time between defrosting and cooking may be needed to ensure its centre is completely defrosted.
  • If defrosting thick cuts of meat or a whole chicken, do turn the meat over halfway to ensure it is thoroughly defrosted. Thaw poultry breast side down and turn over halfway through the defrosting time. Delicate parts like wing tips can be shielded with small pieces of smooth foil.
  • Some dishes like thick and hearty soups require constant stirring while defrosting so it’s crucial that you place these types of frozen foods in containers that are large enough to facilitate stirring later on.
  • Browning food can be done with the grill element in a combination microwave after the cooking stage. For those who do not own such a microwave, there are also browning plates that can help brown meats using microwave cooking.
