A steam combination oven can be one of the most versatile appliances in your kitchen, capable of several different methods of cooking – convection, steam and combination.

With the ability to utilise dry and wet cooking methods – or both – in one cooking cycle, the appliance can perform many culinary applications, such as baking, grilling roasting, steaming and braising.

A fairly recent introduction to kitchens, the steam combination oven was introduced only in 1976 and was mainly used by professional chefs in restaurants. Recently, appliance makers like Electrolux, which supplies state-of-the-art cooking equipment to 50% of Michelin-star restaurants in Europe, are putting their professional experience to make combination oven cooking more accessible to the home chef.

Enter steam combination ovens like the Electrolux EOB98000X, which is capable of culinary multitasking, much like its professional counterparts. Here are some handy ideas  for cooking with this versatile  oven:

Low temperature cooking

Using low temperature steam to cook is similar to sous vide cooking, where water is held at a consistent temperature to cook food. Such a cooking method ensures that food never gets overcooked, as it can only get as warm as the surrounding temperature. As a result, meat cooked with the low temperature cooking function comes out beautifully tender and succulent.

When used to prepare dishes like roast beef or steak, such a cooking method ensures that the meat is precisely cooked, with the perfect internal temperature for the required doneness. No more guessing if the beef is medium rare or worrying if it’s overdone. On top of that, if you’re preparing several pieces of steak of varying sizes and thickness for a large dinner party, using low temperature cooking in a combination oven ensures that they all end up with the same level of doneness.

Roast beef

Low Temperature Cooking in a combination steam oven ensures that even large cuts of meat comes out perfectly cooked to the doneness required.

Before putting the meat in the oven, sear it in a pan over very high heat. The Electrolux Maxiflame hob can achieve consistent and high flame temperatures comparable to those in professional restaurants, and can help sear the meat perfectly before popping it in the oven to complete the cooking process.

Dry your own healthy snacks

Home chefs can create their own dried fruit or vegetable snacks in a steam combination oven. Rather than having to wait for ideal weather conditions to sun-dry fruit, or buy a separate dehydrator, use the defrost/drying function, available on models like the  EOB98000X to create the optimal temperature and low humidity needed.

Sterilising

The high temperatures and wet heat of the steam cooking function makes it possible to sterilise containers like baby bottles. Place the cleaned containers upside down at a slight angle in the middle of the oven shelf on the first shelf rack and steam for 40 minutes at 96°C, enough to kill any bacteria.

Making preserves

The ability to control the temperature and humidity in a steam combination oven allows you to make your own fruit or vegetable preserves without fear of burning or having the mixture boil over. Using the Ventitherm Fan function in the EOB98000X, which gently circulates air evenly throughout the oven, allows the preserves to be simmered at a precise temperature.
