Easy microwave dinner ideas

Throw out the stereotype of the unhealthy microwave dinner. The microwave can be a handy ally in the kitchen for cooking nutritious and delicious meals with fresh food in just minutes. Risotto

The classic risotto is a hearty dish romanticised as prepared with much effort and time spent at the stove.  Today, you can make modern day risottos with the same love and attention in less than half an hour.

Simply mix 6 tablespoons olive oil with 1 cup of minced onion in a microwave-safe dish and microwave uncovered for 3 minutes. Stir in the rice and cook for another 3 minutes. Pour in 6 cups of a broth of your choice, preferably chicken or vegetable and stir. Microwave for another 12 minutes before stirring in vegetables like artichokes or mushrooms and cook for another 6 minutes. Stir in any extra seasonings, such as lemon zest, and cook for 2 more minutes.

Remove from oven, stir in salt to taste.  Voila – A fresh risotto for the dinner table.

Chicken

How about cooking a tasty chicken dish in the microwave in 10 minutes?   Simply combine the ingredients in a dish, such as garlic, salt and pepper over the chicken, then cover and cook on high for 4 minutes.

Carefully take out the dish, turn the chicken over and cook for another 5 minutes.  Different models may cook at different temperatures, so it’s best to keep an eye on the chicken to ensure it is cooked through and evenly.  If it’s still not done, continue to cook it in 1 minute intervals. When the chicken is cooked to your liking, let it sit for 2 minutes before eating.

Prawns

We’ve covered steaming fish, and it’s not the only seafood that can be cooked in the microwave oven. Clean and wash the prawns thoroughly, then dry and add salt. Put oil and any onions into a microwave-safe bowl and cook uncovered.  If you’re using a marinade or ground paste, cook them uncovered for 4 minutes. Then add the prawns and salt to taste and cover the bowl.  Cook for 3 minutes.
