Making a meal of simple soups

Whether you’re juggling a full-time job, a busy family, or hectic schedule, sometimes there’s just not enough time to prep for dinner.  For a last minute dinner, nothing beats a hearty soup. But that doesn’t mean the meal has to be drab.

The energy efficient Electrolux FLEXI cooking hob reduces boiling times.

Take your steaming bowl up a notch with these simple soup recipes, from add-ins to quick and filling garnishes.  With cooking hobs like the Electrolux FLEXI, whose 5.0kW burners heat up faster and reduces boiling time, it’s quicker and easier than ever to make dinner in one pot. The cooking hob also offers enhanced thermal efficiency, which saves on gas consumption.

Add garnishing

By Ruth Hartnup
Add garnishes like pumpkin seeds and herbs to transform a plain soup into one fit for a restaurant.

Any soup mix can be transformed into a stellar meal with a little finishing touch. Try adding a healthy garnish to your next bowl of creamy vegetable puree, like toasted pumpkin seeds, chopped olives, or fresh herbs.  The Electrolux Strauss blender comes with a detachable mill grinder that makes it easy to grind dry herbs and spices.

Meatball soup

Take your meatball soup beyond just meat or fish balls in chicken stock. Start with fresh chicken broth, but add chunks of onion, celery, and carrot, and use plenty of herbs like dill and parsley. Add noodles to make it a light but filling meal.

Tomato Soup Update

Get a good, creamy can of soup from the store.  If you have time to spare, you can also make your own fresh tomato soup. Add even more richness with a few quick stir-ins, such as Thai red curry paste, a hefty spoonful of pesto, or some chopped bacon for extra flavour.

Jazz Up Clam Chowder

Take canned chowder from bland to bold. Use milk instead of water in the soup. Then add drained baby clams, potatoes, and canned corn. Finish with heavy cream and serve with bread for a hearty and filling dinner.
